The Blodgett INVOQ 101BLE is an INVOQ 10-pan, 1/1 GN electric combi oven, supplied with a stand. It uses boilerless steam injection, which uses less water and needs less descaling, and cooks with steam, convection or both, controlled from the INVOQ touchscreen. Each shelf takes a 12" x 20" hotel pan (1/1 GN); choose 8 racks at 3.35" spacing or 10 racks at 2.76" spacing when ordering.
