The Blodgett INVOQ 102BE is an INVOQ 10-pan, 2/1 GN electric combi oven, supplied with a stand. It uses a dedicated boiler for fast, dense steam, and cooks with steam, convection or both, controlled from the INVOQ touchscreen. Each shelf takes a two 12" x 20" hotel pans (2/1 GN) or one full-size sheet pan; choose 8 racks at 3.35" spacing or 10 racks at 2.76" spacing when ordering.
