The Blodgett INVOQ 61BE is an INVOQ 6-pan, 1/1 GN electric combi oven, supplied with a stand. It uses a dedicated boiler for fast, dense steam, and cooks with steam, convection or both, controlled from the INVOQ touchscreen. Each shelf takes a 12" x 20" hotel pan (1/1 GN); choose 6 racks at 3.35" spacing or 7 racks at 2.76" spacing when ordering.
