The Blodgett ZEPH-100-E DBL is a Zephaire full-size electric convection oven, two standard depth sections. Each cavity takes five 18" x 26" sheet pans and uses three tubular heating elements (11 kW per section) and a two-speed 1/2 HP blower motor. Controls are a solid state infinite control with separate thermostat and timer dials, with a cook / cool-down switch.
