The Blodgett ZEPH-100-G DBL is a Zephaire full-size gas convection oven, two standard depth sections. Each cavity takes five 18" x 26" sheet pans and uses a dual-flow gas system that combines direct and indirect heat (50,000 BTU per section), electronic spark ignition and a dual-inlet blower with a two-speed 1/2 HP motor. Controls are a solid state infinite control with separate thermostat and timer dials, with a cook / cool-down switch.
