The Eagle Group Panco CH3000B-208 is a half-height cook and hold cabinet with humidity control, wired for 208V service. It cooks by time or probe from 100°F to 350°F, then holds between 145°F and 200°F while a water-fed solenoid keeps moisture in the cabinet, so roasts and baked items stay tender instead of drying out.
