The Vulcan VP18-1M3ZN is a full-height mobile heated holding and proofing cabinet with 18 pan levels and a full glass door. A fan and air tunnel move heat evenly through the cabinet, and the controls sit on top, out of the way of mops and carts. A switch changes it from proofing (with the included water pan) to holding.
